Ghazleh — called غزل البنات in Syria, known recently in the West as the “angel hair bar” — is one of the oldest artisan confections of Damascus and Aleppo. Skilled hands pull caramelized sugar hundreds of times until it becomes impossibly fine white threads, as light as silk, fragrant with rose water and layered with toasted flour.
